Carrot
Ginger Soup

Olive or canola oil |

Carrots |
• |
Onions |
• |
Ginger root, fresh |
• |
Water or vegetable stock |
• |
Spices: pepper, salt |
Sauté onions and ginger on medium heat
until transparent
Add chopped carrots and liquid
Bring to a boil, then reduce to simmer
Cook until carrots are soft
Puree all or some of carrots to a fine soup or soup with pieces
of carrot
