Carrot Ginger Soup


Olive or canola oil
Carrots 
Onions 
Ginger root, fresh 
Water or vegetable stock 
Spices: pepper, salt

Sauté onions and ginger on medium heat until transparent
Add chopped carrots and liquid
Bring to a boil, then reduce to simmer
Cook until carrots are soft
Puree all or some of carrots to a fine soup or soup with pieces of carrot
