Mike's Ultimate Chocolate Chip Cookie (vegan)


1 1/2 cup rolled oats
1 cup whole wheat flour
1 cup walnuts (optional)
1 cup chocolate chips
1/2 tsp salt
1/4 tsp baking soda
1/2 cup olive oil
1/2 cup maple syrup
2 tbsp water
2 tbsp vanilla

1. Preheat oven to 350 degrees.
2. In a large bowl, combine the oats, flour, chocolate chips, salt, and baking soda.
3. In a separate bowl, combine the oil, maple syrup, water, and vanilla.
4. Combine the wet ingredients with the dry and let sit for 5 minutes.
5. Spoon tablespoons of dough onto a greased cookie sheet.
6. Bake for 10-18 minutes, or until lightly browned.
