Polenta
with Basil & Tomato

cups water |
• |
1
1/2 cups polenta |
• |

Tbsp. olive oil |
• |
1
cup chopped tomatoes |
• |
3/4
cup finely chopped fresh basil |
• |
salt
& pepper to taste |
Bring
water to a boil
Slowly whisk in polenta
Lower heat, cook 10 minutes
Season to taste with salt and or other seasonings
In the last minute of cooking, stir in 1 cup chopped tomatoes
and cup finely chopped basil
Pour into pan to cool
Serves 4
For a slightly different taste mix in sun dried tomatoes at
the beginning in place of fresh tomatoes. Another variation
is adding goat’s feta sprinkled on top.
