Polenta with Basil & Tomato


5 cups water
1 1/2 cups polenta
2 Tbsp. olive oil
1 cup chopped tomatoes
3/4 cup finely chopped fresh basil
salt & pepper to taste

Bring water to a boil
Slowly whisk in polenta
Lower heat, cook 10 minutes
Season to taste with salt and or other seasonings
In the last minute of cooking, stir in 1 cup chopped tomatoes and cup finely chopped basil
Pour into pan to cool

Serves 4

For a slightly different taste mix in sun dried tomatoes at the beginning in place of fresh tomatoes. Another variation is adding goat’s feta sprinkled on top.
