Quinoa with Cranberries & Almonds


1 C Quinoa
2 C Water
Handful Cranberries
Handful Sliced or Slivered Almonds

Rinse quinoa (or soak for 10 minutes to remove any bitterness, then rinse).
Combine water, quinoa and cranberries in pot.
Bring to boil and simmer for ~20 minutes. In last 5 minutes add almonds and keep covered.

Makes about 4 servings
